Paleo Fruit Pancakes
If you love pancakes, but Think that you can’t enjoy them anymore, you may be excited to know that there’s a way for you to still eat your favorite breakfast food. You can make paleo-friendly pancakes with just a few ingredients.
The ingredients you’ll need to have to create these fruit pancakes include:
- 1 banana
- 1 egg
- 2 tablespoons coconut flour or almond flour
- 5 blueberries
- coconut oil
Start by peeling your banana and smashing it down with a fork in a bowl. You’ll then crack the egg in the bowl and mix it with the mashed banana. After you’ve added the egg, throw in your flour and blueberries and then mix everything until it’s blended to perfection.
Add a teaspoon or two of coconut oil to your frying pan. Pour the pancake mixture into the pain and cook on a low flame. You’ll only need to cook each side of the pancake in the pan for about a minute. Once your pancakes are cooked to perfection, remove them from the pan, put them on a plate, and enjoy them!
Sliced Ham and Eggs
An easy way to switch up your usual egg breakfast would be to scramble your eggs as you normally would. However, once you’ve scrambled them, grab a few slices of ham and place some of your scrambled eggs on top of each slice. Roll your ham slices up and place a toothpick in the center of them to keep the rolls in place.
Once you’ve got your scrambled eggs rolled up in pieces of ham, place the pieces on a baking sheet, put them in the oven, and then bake them for about 5 minutes at 350 degrees F. It’s just enough time to heat the ham without drying out the eggs. And, if you’d like to add even more flavor to this dish, throw some sliced onions and green peppers in with your eggs.
Rather than using a soft tortilla shell to create egg burritos, use the egg itself as the burrito shell. Crack two or three eggs into a bowl, season with sea salt and black pepper, and then mix well. Throw the egg into a frying pan and cook the egg for about two minutes on each side. Instead of scrambling it up, simply leave it as is and then place it on a plate.
Now you can add ingredients on top of the egg. You may want to add diced tomatoes, slices of avocado, or even green pepper. Once you’ve added some of your favorites, roll everything up and enjoy your egg burrito.
